The Pacific is great, but the Caribbean's closer for many of us. As Caribbean diving goes, I greatly enjoyed the Wind Dancer. There's a lot of variety in the sites on that itinerary and you get to see some critters in that area that you don't see much of elsewhere. (I'd actually dove in St Vincent and Bequia several times before and greatly enjoyed it. A liveaboard in that area was something I'd been wanting to do for a long time.)
The viz was lousy the couple dives we did in Grenada too. Had been lots of rain, but I sort of wonder if it's ever very good?
