Chicken Big Mamou
(4-6 Servings)

1/4 cup chopped onion
1/4 cup chopped green pepper
2 Tbsp butter
1 cup chicken stock
1 cup 35% cream
Saute onion and green pepper in 2 Tbsp butter until soft; add stock and cream, heat to boiling point, then set aside.

1.5 tsp each of Sage, Basil, White pepper, Onion powder, Garlic powder, Cayenne
1/2 tsp each of Thyme, Paprika, Black pepper, Salt
2 Tbsp butter
6 boneless chicken breasts
Mix spices and dredge the chicken breasts; cook them in 2 Tbsp butter on low heat for 15 minutes.

2 eggs
3/4 cup milk
1/2 tsp each of Dry mustard, Cayenne, Thyme
1/8 tsp nutmeg
1/2 tsp salt
1.5tsp baking powder
1/4 cup chopped onion
1 cup flour
Whisk milk and eggs together; add mustard, cayenne, thyme, nutmeg, salt, baking powder, onion. Slowly mix in 1 cup flour. Steam in colander for 15 minutes.

Finishing Touches:
1 Tbsp flour
Remove chicken from pan and add 1 Tbsp flour to butter/drippings to make a roux. Add the cream sauce and blend well. Add the chicken and the dumpling cut into serving pieces, simmer 5 minutes.
Server with hot corn bread.

Rotisserie Chicken - I get it from Costco
1 or more heads of lettuce
Toasted Sesame Seeds
Chopped Green Onion - if desired
Rice Vinegar - I use Trader Joes Seasoned Rice Vinegar
Salad dressing - Asian sesame dressing, a sweet vinaigrette, or a light sweet home made

Carefully, lightly toast sesame seeds on a piece of aluminum foil under the broiler or in a toaster oven.

Slice the lettuce into about 1/4 inch strips with lengths of about 3-4 inches. Peel half of the cucumber then run a knife down the length twice to quarter the peeled half. Slice the cucumber in about 1/4" thick quarters. Slice chicken into chunks/pieces that are easy to pick-up with a fork. Keep skin attached for flavor. Dampen mixture with rice vinegar and stir together.

When ready to serve; sprinkle toasted sesame seeds on top, clip cilantro into salad with scissors so leafs are whole and stems are chopped. Add chopped green onions if desired. Pour on favorite salad dressing and toss salad. Add more rice vinegar if desired.

This dish is good anytime and is great for large parties. Just add more salad.
