My can't fail Shrimp Creole Recipe:

2 tablespoons butter or (bleech!) margarine
1 1/2 cups Onion, chopped
1 Bell pepper, diced
5 stalks Celery, chopped
2 15 oz cans tomato sauce
4 cloves Garlic, minced
2 tablespoons Parsley
1 teaspoon Paprika
1 teaspoon cayenne pepper, to taste
1/2 teaspoon Black pepper
1/4 teaspoon White pepper
1 Tablespoon Hot Sauce
2 teaspoons Sugar
1 pound Shrimp, peeled and deveined
6 cups Cooked rice

Melt the butter in a 4 qt pot, add 1/2 of the onion, pepper and celery. saute over a medium high heat until the edges of the onion begin to brown

Add the tomato sauce, cayenne pepper, white pepper, black pepper, garlic, remaining vegetables, sugar and hot sauce to taste. Allow to cook over a low heat for 1/2 hour

10 minutes before serving, add the shrimp and allow to continue to cook. The shrimp is done when it's pink and curles.

Serve over rice.

*This can also be made with 1pound chicken but also add 1 teaspoon basil and 1 teaspoon thyme to compliment the chicken


ETA: If you're in a hurry, just toss everything in the pot except the shrimp. You don't get that extra flavor from the carmelized veggies, but it's still good. (You save about 10 minutes.)
