White Rice by the Halves

A staple accompaniment for many dishes

1/2 a cup of finished rice is a good amount for most people
You start with 1/2 that amount of dry rice (1/4 cup per person)
You need 1/2 a cup of boiling water per person

While the water comes to a boil in a kettle, heat some vegetable oil in a pot over high heat.
When hot, add the dry rice and stir until most of the grains turn a bright white.
Remove the pot from the heat and add the boiling water.
Give it a stir, cover and return to the burner, over the lowest heat setting possible.

Leave it alone for a 1/2 hour. Then serve.

You can add some soup cubes at the same time you add the water (1 cube per 2-3 people - dissolve in a cup of the boiling water before hand is best).
I have also added some chopped onion when the dry rice goes in and/or some dry vegetable flakes when the water is added.
The same basic method works for Basmati or Jasmine rice - just check the cooking time and adjust accordingly.
