I made this earlier this year for a BBQ cookoff.

Butterfly some shrimp, marinate them in some EVOO, with crushed garlic and some fresh rosemary.
The roast a Plabano Pepper, place it a baggie and let it sit for several minutes, then remove the skin. Slice stips of the roasted pepper and place it and some grated Manchago cheese and then wrap in Serrano ham, skewer them and place on the grill till done:smiley20:

I take it that the Shrimp, cheese and pepper are wrapped in the ham?

Yeah Serrano ham is similar to Prosciutto. A dry cured ham.
