If you are like us you have been blessed with lots of tomatoes from your garden. Now it is time to freeze them for sauces during the winter. An easy way to peel the skin off them is to have a pot of boiling water ready to go. Using a sharp knife, cut a small X into the bottom of the tomato. Stick a fork into the top and hold it in the boiling water for 15-20 seconds. Pull it out and use your knife to pull down each of the flaps from the X. The skin will just slide off. Cut out the stem point from the top, drop in a zip-lock bag and freeze for winter. Enjoy.

glad you got tomatoes this year. the crop around here was terrible no one got any amount of tomatoes out of their gardens. I know people that have been gardening for most of their lives that said this was the worst year ever.

Also a very nice technique for starting your concassť as well. After peeling, remove the seeds and dice.
