The Mach 5 is the newer of the 2 wings. I have a signature series wing only because the Mach 5 wasn't out when I bought my wing. The signature wing is a close out, so you can save some money, or you can get the Mach 5 which is the current model. If it were up to me today, I'd definetly go with the Mach 5 wing.

Price not being a consideration I would say Mach V. The Mach V is state of the art and very streamlined. Biggest advantage I realized from the MV over my 30# Oxy Razor (which is the same shape as the standard Sig) was the ease with which the bubble could be moved. Buoyancy control is very precise.
In the winter, I prefer the Mach V. In the summer however I prefer my Razor.
