I tried a 7mm john/jacket combo last year, looking for a nice cold water suit...OMG...I felt like the michellin man...I can't handle that much neoprene.
If you really want to look at a thick suit, look at the extra $$ for a henderson hyper-stretch...they are thick without feeling as 'stiff', very stretchy. I only tried one on in the store, never dove with it.

This one was an aqualung with their "aquaflex" neoprene. I guess that just shows the difference in quality between aqualung and henderson. I just need to actually find a store near me that has them so I can even try one on. Last 2 places I called didn't even carry the brand.

I've never tried an aqualung product...so I can't speak to it...however, henderson has a couple of different models - the 'hyperstretch' models are some of their nicest (and most expensive)...I ended up buying a 5mm henderson (not hyperstretch) from ST, it was one of their closeout 2007 models, and I think with the 10% forum discount I gave 110 for it. Not as nice as the hyperstretch, but a great value, and a nice fit.
Try a bunch on...and remember, a wetsuit that feels just a a little too tight, is probobaly a perfect fit. My wife struggles with that last part...she hates the feeling of tight clingy clothing, so she wears as little suit as possible throughout the year...if she's diving in 75 degree water everyday for a week, she's in a shortie...I'm in a 3mm full (I'm a wuss though). She gets cold in her shortie, but she dislikes the wetsuit more than an occasional shiver, and she's never pushed her safety with the issue.

Look at the Henderson Thermoprene. Very stretchy and fewer denero than the Hyperstretch. I have a couple Thermoprene suits (2mm shorty, 3mm full). Very different experience than straight neoprene. In the water, I don't even feel the suit. That said, I've not tried the 7mm Thermoprene. I can expect a little more restriction, but not much.
YMMV
