ST Vegetarians

Please no debates.

Are there other ST vegetarians out there? It seems that every dive group or buddy I'm with can't wait until their next meat intensive meal. I did meet one vegetarian in Bonaire, 2 weeks ago.

I'm thinking....pasta with marinara sauce and a nice salad....they're thinking lobster, prime rib, steaks.

How about saying Hi!, and sharing some of your favorite foods/recipes/treats.

One of my favorite treats is a fruit smoothie....soy milk (unflavored, -cane sugar), strawberries, a little orange juice, bananas, and pineapple.

Any questions starting with "Why....?" will be answered by crickets chirping.

Hello seen that noone has posted yet I am not a vegatarian but I am with you on the pasta and marinara and salad. I love salads and pasta and they do not have to have meat in them.

Hi Jenn,
I never got it together to have that pasta dish in Bonaire, but boy was I craving it! Thanks for your post, and please share your favorite vegetarian recipes with us.

ALthough I am squarley in the looking for my lobster and sirloin post dive my wife is a Vegetarian (nothing to do with easting animals and everything to do with texture and personal taist). So although I don't choose to eat tofu often I do find my self cooking it for the wife frequently.

the recipies for ya:

1) grilled ginger tofu:
1 brick of extra firm Tofu
1 lobe of fresh ginger
tamari or soy sauce
brown sugar
green onion
salt pepper
garlic
Honey
extra virgin olive oil (evoo)

Slice the tofu in half so you have two equal slabs half the original size and drain under a weighted cloth to get as much moisture out as possible (see Alton Brown tofu). peal and slice spears of ginger about the width of tooth picks and no longer than the tofu is tall. poke wholes in in the tofu and insert the ginger spears. In a medium sized bowl mix about a cup or two of soy/tamari ,1 tbl. spoon of brown sugar. 1 tsp of honey, tbl spoon of garlic diced, a hunk of green onion diced salt and pepper to taste. Mix all ingredients well to incorporate. place ginger pocked tofu in the bowl with marinade for no less than 1 hr. no more than 1 day. the longer the better. right before placing on the grill paint a coat of EVOO. important so it does not stick. Grill for two or three mins per side. Do not touch till ready to flip. It will stick at first then let go when sugars caramelize.

2)Vegan red velvet cake

Ingredients:
2-1/2 cups unbleached flour
1-1/2 cups turbinado or other natural vegan sugar
1/2 cup of softened magarine
1 cup soymilk
1/2 cup unsweetened applesauce
2 tablespoon cocoa powder unsweetened
1-1/2 teaspoon baking soda
1 tablespoon of lemon juice
1 teaspoon vanilla extract
1 teaspoon salt
1 teaspoon vinegar
2 ounces red food coloring (or beet juice)

Frosting Ingredients:
1 cup confectioner's sugar
8 oz. vegan "cream cheese"
1/2 Cup vegan margarine
1 teaspoon vanilla
1/2 to 1 cup soymilk

Directions:
Preheat oven to 350 degrees. In a cup pour the soymilk and add the lemon juice. Let sit while preparing the next dew ingredients. This makes "buttermilk". Cream together the margarine and sugar and then add the applesauce.

In a small bowl mix together cocoa and food coloring to form a slight paste. Add it to the creamed mixture. Mix the salt and flour together and add it to the batter alterately with the 'buttermilk' in three batches mixing after each addition. Add vanilla extract. Mix in baking soda and vinegar. Pour bater into 2 greased cake pans (I used round) and bake for 40 minutes or until toothpick comes out clean.

Frosting:
Mix cream cheese and softened margarine together. Add sugar vanilla and soymilk. Mixture will be very soft (almost a gluelike texture). After cake cools slightly put one layer on a plate and pour some frosting over so that it runs down the sides. Let cool a little more and add the next layer and repeat process.2)

I have been a Pescetarian, bascially a vegetarian that eats fish , for 4 years now. I also limit my fish intake to that listed on the Monterey Bay Seafood Watch as much as possible.

One day I hope to ditch fish (especially since I like swimming with them) but not quite there yet! I thought I would really miss meat but after I stopped eating it I never craved it again.

been a vegetarian my entire life. recently started having some chicken when i run out of otions and the only other alternative is starving. i will be glad to post many recipies. my wife and i cook vegetarin food everyday. we are indian and we primarily cook indian food....(very spicy). I will dig up some non spicy recipe for you guys. in the mean time, here is a recipe for peanut salad.

1. boil some raw peanuts in a pressure container or a closed container in salt water for 15 minutes (peanuts should loose their raw taste)

2. chop 1 onion into small and fine pieces.

3. chop 1 tomato similarly

4. chop some cilantro into small bits

5. chop an unripened mango (optional) in to small pieces.

6. mix everything into an homogeneous mixture and squeeze half a lemon into it.

7. add some finely ground red chilly powder (optional) and some green thai chillies (finely chopped) and some salt if needed.

8. mix again and enjoy.

Now that is what I am talking about! I am going to try this tomorrow I think. I would love to see some curry recipes??? I love curries but have never really cooked with it.
