    Cannoli recipes and need some help.

    Ok Now I ant an Italian but have been dieing for one of these thigns for YEARS. Being indiana we ant got to many Italian bakeries around .

    So does any one have a recipe for Cannolis or now where a good one is. Normal I just dive in and make my own recipe but I am at a lost with this one.

    Northern or Southern Italy? The Northerners add riccota cheese to their cream. The Southerners / Sicilians use pure cream, no cheese. I have a die-for cream recipe from my Grandmother. I will sometimes make it without the shells and serve it as a pudding.

    don't they use marascapone?)(sp?)-but the shell has to be etherally light & crispy, in addition to a heavenly filling- i lived on long island for years, 6 blocks from the world's best italian bakery(spaienza's)-splitlip will know, he's a long islander, deep down
    if it has tires or testicles, eventually it is going to give you trouble

    I've heard it made with both marscapone or riccotta. Since my family didn't appreciate the taste of either cheese in our sweet dessert, it was never a topic of discussion.

    Funny story, the absolute first time I went to Olive Garden was in high school, a group of us that hung out together decided to go there for dinner. It was, apparently, the grown up thing to do at the time. Olive Garden was just hitting our neighborhood and was considered a new restaurant.

    I finish my dinner and order a cannoli thinking of plates of them at my grandma's after almost any family-gathering meal. It arrives, I pick it up to take a bite and

    literally spit it directly into my napkin. So dignified. I know. But, I will never forget the taste; it tasted sour and rancid to me.

    Call the waitress over, tell her its bad, we discuss it, and she tells me about the cheese. I gave it back to them.

    When I arrived home I said, "MOM!! They PUT CHEESE in a cannoli!!" That was the first time, at 17, I heard about cheese in the family dessert. Now I always ask if the cannoli is Southern or Northern and includes the cheese before I taste.

    at least you used a napkin

    I get mine from Marie Barrone.
    Big guy do you cook? I mean... maybe you should start with a little easier food.. like kraft mac and cheese and work up to things like cannolis?
