Rick - not meaning to be rude to Katie (please forgive me) but I'm gonna answer your question -
The Homosassas and Crystal Rivers in Florida (about an 1 to 1 1/2 hours north of Tampa) offer manatee snorkeling tours. There's lots of tour operators - just google Crystal River manatees. I'm planning on doing one in October. If your wife snorkels she should love that, as long as she's not intimidated by the manatees. Disney's main diving tour is DiveQuest. The also offer the Dolphins In Depth tour that is similar to Dolphin Encounters. They do have a snorkeling pool over at Typhoon Lagoon, (a Walt Disney World water park) complete with little sharks and lots of fish, and it's recently come to my attention that the same park offers a 'surface' scuba excursion, but I haven't looked into/confirmed that. That would be perfect for my aquaphobic husband. I know Sea World's Discovery Island is supposed to be a really great place for snorkeling and dolphin interaction.

Its really fun!
Its called the Epcot Dive Quest. The Dive Quest is about 2 hours long, they start off by giving you a back stage tour of the Living Seas and talk about all that Disney is doing for conservation, then you change into wet suits and you get to do a 40 minuted dive, not snuba, inside the Living Seas. On fascinating thing is that all of the species of wildlife that you will encounter is either protected or endangered species, so you get to see rare stuff that would be unlikely to see in the wild. No, you cannot bring a camera, but one of the staff videotapes the dive, and the tapes are availible for purchase. If you are going, be sure not to miss this great experience! I had a blast! There is also a snorkel quest for those that are not certified to dive, but want to experience the Living Seas from within.
